鋁箔袋是造成后產(chǎn)品二次污染的一個(gè)主要原因,常規(guī)的化學(xué)或物理方法損害包裝物的品質(zhì),微波比常規(guī)加熱所需溫度低、對(duì)產(chǎn)品質(zhì)員不會(huì)造成很大影響。就塑料包裝袋殺技術(shù)而言,主要是針對(duì)密封的鋁箔袋。因?yàn)檫@種殺是在物品包裝好后的殺,一般不采用化學(xué)方法。這些殺技術(shù)主要有下列幾種:

1、熱裝法
1. Hot pack sterilization method
這是一種將加熱80~90℃的食品或飲料,趁熱裝入熱的鋁箔袋中,進(jìn)行密封后,在高溫或一定溫度下貯存的方法。這種處理方法主要用于酸性大的液態(tài)食品。

2、蒸煮法

這種方法主要用于一些酸性較小的食品,如肉、魚、家禽、牛奶、雞蛋等。溫度一般為121℃或134℃。采用的方法是將鋁箔袋(蒸煮袋)放人高壓密閉容器內(nèi)用蒸汽或加壓水加熱。根據(jù)蒸煮袋在時(shí)的不同情況可分靜置加熱與回轉(zhuǎn)加熱等。 加壓高溫根據(jù)采用的加熱介質(zhì)不同,又可分飽和蒸汽、空氣加壓蒸汽以及加壓水等。目前用的較廣的為飽和蒸汽,因?yàn)樵摲绞劫M(fèi)用經(jīng)濟(jì)合理,濕度控制方便。

鋁箔袋包裝食品或飲料后也可以通過紫外光線的照射達(dá)到的目的。在采用該法時(shí),要視包裝袋大小、內(nèi)容物的多少,而確定紫外線的照射強(qiáng)度和時(shí)間。
